Instructions
Step 1
Add olive oil and onion to a non stick pan and sauté till onions are fragrant & translucent
Step 2
Add minced garlic and let sauté for about 3-5 minutes
Step 3
Add chopped tomatoes and spices and let it simmer with the lid on till tomatoes are soft and mushy
Step 4
Crack eggs on top and cover with the lid till eggs are done to desired preference
Step 5
Garnish with chilli flakes and chopped coriander and serve with sourdough / normal bread / pita bread
