Instructions
Step 1
Cut haloumi into 1cm thin slices then rest on paper towel for 1 minute.
Step 2
Heat a small frying pan on medium heat. Add haloumi and cook for 2-3 on each side, until golden brown.
Step 3
Meanwhile, spread one slice of bread with hummus.
Step 4
Top with sun dried tomato, red onion, beetroot, haloumi and baby spinach. Top with remaining bread slice and serve.
