Instructions

Step 1
Assemble all ingredients.
Step 2
Wash and slice the okra.
Step 3
Finely chop onions, chili and garlic.
Step 4
Dice the tomatos.
Step 5
Get cooking: add half the oil to pan, add okra and cook for 6-8 minutes until lightly golden brown and not slimy anymore. Transfer to a plate and set aside.
Step 6
In the same pan. Add the remaining oil and cumin, toast until fragrant.
Step 7
Next add the onion, garlic, chili and cook for 4 minutes until soft and lightly golden.
Step 8
Add the tomatoes and cook out until saucy.
Step 9
Add the turmeric powder, coriander powder and garam Masala. Cook out for 4 to 5 minutes.
Step 10
Add the okra back in the pot with the methi and some water.
Step 11
Cook everything out until it reaches a nice consistency.
Step 12
Season with sált and chopped fresh coriander.
