Coconut curry chicken
This coconut curry chicken is packed with lots of flavor, it has chicken, chickpeas, spinach you can add what ever vegetables you want to it. I served it with some white basmati rice it was so delicious and so filling.
——ingredients——
-5 boneless skinless chicken thighs
-3 tablespoons olive oil
-1 large onion
-4 cloves of garlic
-1 tablespoon of ginger
-1 tablespoon of curry powder
-1 teaspoon of cumin
-1 teaspoon of coriander
-1 teaspoon of chili flakes
-1/2 teaspoon of turmeric
-1/2 tablespoon of salt or to taste
-1 14.5oz can of diced tomatoes
-1 15.5oz can of chickpeas drained
-1 13.53oz can of coconut milk
-1 pound of spinach
:
Cover and simmer on medium to low heat for about 15 to 20 minutes

-3 cups of basmati rice (wash and soak in warm water for 20 minutes)
-3 tablespoons of olive oil
-1 tablespoon salt
-3 cups hot water
Cover and wait for the water to evaporate then lower the heat to really low and cook for another 15 to 20 minutes.
