Satay Sweet Potatoes

An easy, adaptable, healthy and extremely filling vegan midweek meal. Great for using up those random leftover bits of green vegetables - you can use broccoli, mangetout, cabbage, courgettes, peppers, or anything you can find.

Instructions
Step 1
Wash sweet potatoes, smother in oil, salt and pepper, and roast at 180°C for an hour to 1.5 hours or until skin is crispy and middle is soft.
Step 2
Gentle saute half the garlic, ginger and chillies in oil. Add in equal measures of peanut butter and water, then season with soy sauce.
Step 3
Stir fry the remaining garlic, ginger and chillies in oil. Add the green vegetables and stir fry on a high heat for 5 minutes or until just cooked.
Step 4
Pan fry the halloumi until crispy on both sides.
Step 5
Slice open the sweet potatoes, fill with stir fried veg, top with satay sauce and fried halloumi.
