Instructions
Step 1
In a bowl, whisk eggs with butter. Season with salt and pepper.
Step 2
Chop chives.
Step 3
Grease a nonstick pan with oil and place it over medium heat.
Step 4
Pour whisked eggs into heated pan.
Step 5
Constantly stir eggs, periodically removing pan from heat.
Step 6
When eggs are no longer runny add sour cream and chives.
Step 7
Mix until combined.
Step 8
Optional to season with additional salt and pepper.
