This was adapted from several recipes online. It is simple to make and takes only about 45 minutes to come together fully. I have the spices premixed in a jar that I just grab from. It takes 3.5 Tbsp of the premix to make one batch.

Step 1
Caramelize onion and garlic in olive oil (about 15 minutes medium heat)
Step 2
While caramelizing, Cut chicken into half inch cubes
Step 3
Sprinkle flour, curry powder, garam masala, ginger and chili powder on chicken
Step 4
Add seasoned chicken to onion and garlic and cook for 10 minutes until pink is gone
Step 5
Pour coconut milk over chicken mixture then stir in tomato paste
Step 6
Continue to cook on low heat for twenty minutes
Step 7
Once sauce has thickened, serve. It can be swerved over rice or with nan or both.
