Ingredients
2 servings
2 teaspoonsextra virgin olive oil
0.5onion
chopped finely
2cloves garlic
crushed
1red chilli
chopped finely
1yellow pepper
chopped finely
1 teaspoonground cumin
½ teaspoonground cinnamon
½ teaspooncayenne pepper
400gtins of mixed beans
drained and rinsed, tins, any beans can
2 tablespoonstomato purée
75mlwater
fresh coriander
2sweet potato wraps
Instructions
Step 1
Heat the oil in a pan on medium and fry the onion, garlic, chilli and peppers for 4-5 minutes until soft.
Step 2
Add the spices and the beans, then combine.
Step 3
Now add the tomato purée and water, stir and simmer on a low heat for 10 minutes.
Step 4
Stir through most of the coriander and scatter the rest over the top.
Step 5
Cut the wraps into small triangles and spread them out on a metal baking tray.
Step 6
Cook on 200°C for just 5 minutes, making sure you turn them over half way (for an extra kick sprinkle some chilli powder over the ‘nachos’ before baking).
Step 7
Serve the chilli in a bowl surrounded by the nachos and dig in!
