12 ozrotisserie chicken breast
shredded

½ cupyellow onions
chopped

1 tspgarlic

0.5jalapeno
seeded and minced, optional

1 cupwhite beans canned

1 ½ cupschicken stock
low sodium

8 ozgreen chilies
diced
½ cupyellow corn frozen

2 tspcumin

1 tspcoriander

½ tspchili powder

Instructions
Step 1
Spray a large saucepan with cooking spray. Add onions, jalapenos and garlic. Sauté until fragrant. Add beans, corn, chicken stock, chilies and seasonings. Bring to a boil. Reduce heat and simmer for 30 minutes.
Step 2
Preheat oven to 400 degrees. Make homemade tortilla strips by slicing tortillas into thin strips with a pizza cutter. Place on a baking sheet lined with parchment paper. Spray tops with cooking spray and sprinkle with sea salt and chili powder. Bake for 20 minutes, flipping halfway. Set aside.
Step 3
Remove soup from heat; Divide by number of servings into bowls. Add 3 oz. shredded rotisserie chicken to each bowl. Garnish with Greek yogurt, avocado, homemade tortilla strips, cilantro and a lime wedge.
