1 tablespoonextra virgin olive oil
3 cupsbroccoli florets
2red bell peppers
cut into dices
2carrots
cut into small dices
2garlic cloves
minced
2 tablespoonscurry powder
1 teaspoonchili powder
1 teaspoonpaprika powder
½ teaspoonground cumin
½ teaspoonground coriander
salt
to taste
pepper
to taste
1 ½ cupwater
or vegetable broth
1 cupcouscous
1 cupgreen onion
cut into slices
1chicken breast
cut up
Instructions
Step 1
Cut up and cook chicken
Step 2
Preheat the olive oil in a large pot over medium heat. Then sauté the broccoli, red bell pepper, carrot, and garlic for 1-2 minutes.
Step 3
Add spices to the pot. Sauté for 1 minute.
Step 4
Pour the water into the pot and heat it up. Then add the couscous, stir everything, cover the pot, turn off the stove and let the couscous sit for 5 minutes.
Step 5
Fluff the couscous and stir in the green onion. Season with more salt and pepper if needed and enjoy!
