Instructions

Step 1
Marinate fish with Latifah spice, salt and set aside.
Step 2
In a food processor add shallots, garlic, chilli, ginger and processor until finely chopped.
Step 3
Next add olive oil and pour in the aromatics and fry until fragrant
Step 4
Next add in tomato and fry for 4 minutes then add in Lemongrass water, coconut milk stir and cover to simmer for 10 minutes ( if you have lemongrass stalk use that instead if not soak dried lemongrass with 1 cup hot water)
Step 5
Next add in fish reduce the heat and then simmer for 5 minutes (adjust cooking time according to the thickness of your fish)
Step 6
Serve with rice and enjoy!
