Sunita's Saag Aloo (Aloo Palak)
Commonly known as Saag Aloo, Sunita shares her family recipe. A home-cooked and traditional way to make this popular restaurant dish.
Sunita was born in Punjab. She specialises in North Indian cuisine, which she has been cooking for over 40 years.
She grew up in a family where everyone enjoys eating good food. And in a generation where people are mainly influenced by their mothers' and grandmothers' cooking, in her family, it was the men of the family who influenced her palette.
She teaches on Diaspo because she finds it rewarding to know that other people are interested and willing learn about her skills and experiences. By passing on her knowledge to others, that knowledge can be appreciated and taken further by those she teaches.

Instructions
Step 1
In the medium pan, add oil and heat on a medium temperature, then add the cumin seeds
Step 2
Add the chopped onions and cook for 2 minutes, then add finely chopped/grated garlic and cook until translucent
Step 3
Wash and cut your baby potatoes into 1/2 inch pieces and add them to the pan - cook and stir frequently on a high temperature for about 5 minutes.

Then turn the temperature to medium, add salt, turmeric, chopped tomatoes and cook for a further 2 minutes
Step 5
Then add grated ginger and finely sliced chilli, cook for a further 5 minutes with the lid on to ensure the potatoes are cooked through with the aid of the steam
Step 6
Meanwhile, put the baby spinach (whole) in the small pan with 2 tablespoons of water and bring to the boil, with the lid on
Step 7
Stir the spinach and leave to simmer for 2 minutes. Turn off the gas and leave it to the side
Step 8
Stir and check the potatoes are almost cooked through
Step 9
Add 2 tbsps cream to the spinach and blend. Once blended to a creamy texture, add to the potatoes
Step 10
Cook on a medium temperature for 2-3 minutes

Garnish with fine slices of ginger, baby tomatoes and serve
