4chicken breasts
2 teaspoonsoregano
¾ cupplain flour
60 gmbutter
2 tablespoonsoil
60 gmbutter
extra
2clove garlic
4 rashersbacon
2leeks
6shallots
250 gmmushrooms
2carrots
sliced
440 gmchopped tomatoes
can
440 gmcream of chicken soup
can
½ cupdry white wine
3 x 60mlbrandy
1 teaspoonchilli sauce
1 teaspoonworcester sauce
1 teaspoonsoy sauce
½ cupcream
¼ cupchives
chopped
Instructions
Step 1
Cut chook breasts onto 3 pieces, toss in combined oregano and flour.
Step 2
Heat butter and oil in pan, add chook in batches, cook until light golden brown, remove from pan, place in ovenproof dish.
Step 3
Heat extra butter in pan, add crushed garlic, chopped bacon, sliced leeks, chopped shallots and sliced mushrooms. Cook for a few minutes or until mushrooms are soft, add to chook with carrots, undrained tomatoes, undiluted soup, wine, brandy, chilli sauce, Worcester sauce and soy sauce, mix well.
Step 4
Cover and cook in moderate over for 40 minutes or until chook is tender.
Step 5
Just before serving, stir in cream and chives
