Instructions
Step 1
Remove fat from the thighs and cut into thin strips, about 1/2 inch wide. Place in a large glass bowl.
Step 2
Add ginger, garlic, salt, mirin and soy sauce to the bowl. Mix well. Cover and let marinade for at least 1 hour.
Step 3
Heat oil in a deep fryer or Dutch oven to 350 degrees.
Step 4
In a large glass bowl, add starch and pepper. You don’t really need to measure here, just have enough for all of your chicken. About 1 1/2 cups is usually what you need.
Step 5
In small batches, coat the marinated chicken with the peppered starch and fry until fully cooked. Let rest on a wire rack over a baking pan while you work.
Step 6
Coat with Katsu or spicy mayo and top with green onions.
