Step 1
Heat pan over medium heat. Melt a bit of butter in pan.

Step 2
In a measuring cup, crack two eggs. Add splash of almond milk. Add 1/8th cup of shredded cheddar cheese. Add salt and pepper to taste. Mix vigorously with fork or whisk to break yolks and combine.

Step 3
Pour egg mixture into hot, buttered pan. Add remaining cheese. Agitate with spatula or whisk to prevent sticking. Cook until eggs are no longer wet in appearance, about one minute. Plate eggs.

Step 4
Put a sliver of butter on one side of a slice of whole wheat bread and put in pan, butter side down. Add lid and leave for about 3 minutes.

Put another sliver of butter on the uncooked side of the bread and flip with a spatula. Cover again and cook for 3 minutes. Serve.
