Ingredients

Queso
½ cupcashews
boiled
2 Tbsppickled jalepenos
plus 2 tbsp of the brine, or 1 tsp vinegar and 1/2 tsp salt
¼ cupunsweetened soy milk
½ cupsalsa
1 tspground cumin
½ tspchili powder
½ tspsmoked paprika
Scramble
2 blockfirm tofu
3 Tbsppea protein powder
2 Tbspnutritional yeast
1 Tbspgarlic powder
1 tspsalt
½ tsppepper
½ tsppaprika
½ tspturmeric
¼ tspchili flakes
optional
½ cupunsweetened soy milk
Assembly
Instructions
Step 1
Preheat Oven to 450F
Step 2
Cut potatoes and coat in cornstarch
Step 3
Crumble tofu block into pan and cook on high until starts going golden
Step 4
Spread potatoes on a lined baking sheet and bake for 25 min
Step 5
combine ingredients for tofu scramble sauce and mix, pour into pan with fried tofu, mix well then transfer back to mixing bowl
Step 6
blend all queso ingredients max speed for one minute
Step 7
Warm tortillas on a frying pan or in the microwave
Step 8
place one tortilla on a cutting board, add 1 tbsp salsa, 2 tbsp queso, 2 tbsp scramble, 3 tbsp potatoes and fold closed
Step 9
seal the burritos by searing on the frying pan, sear the opposite side for additional crunch
Step 10
Leftovers: reheat in microwave for 1 minute then sear the outside on a frying pan, serve
Step 11
Note: can add 1 lb potatoes, 2tbsp cornstarch, salt, pepper
