Mushroom Bolognese

It's always useful to have a fail-safe plant-based bolognese up your sleeve for emergencies. Grab a tin of tomatoes, whatever pasta you've got to hand and that jar of Marmite from the back of your storecupboard.

Step 1
Start by frying the onions in a splash of olive oil over a medium heat for about 3 minutes. Season, then add the garlic and mushrooms and continue to fry for a further 5 minutes until the garlic starts to colour.
Step 2
At this point, add the Marmite® and a splash more olive oil and fry for another 30 seconds to coat the mushrooms. Next add the chopped tomatoes and stock cubes and simmer for 10-15 minutes, adding a splash of water if it becomes too thick. Season to taste.
Step 3
Meanwhile, cook the pasta in boiling salted water according to the packet instructions. Drain, mix with the bolognese sauce and finish with some cracked black pepper and a drizzle of olive oil.
