Ingredients
4 servings
1kgchicken pieces
or fillets, with no skin
200gyoghurt
1 Tbspfresh ginger
grated finely
1 Tbspgarlic
grated finely
2 Tbsptandoori powder
easily available in the market
1 tsporange food colouring
optional
2 tspcumin seeds
ground
2 tspground coriander
1 tspgaram masala
½ tspchilli powder
½ tspturmeric powder
salt
to taste
Instructions
Step 1
To get the marinade to soak into the chicken, using a sharp knife, make 2-3 slits on the chicken fillets before mixing the marinade.
Step 2
In a bowl mix together yoghurt, salt, chilli, coriander, cumin, garam masala and tandoori paste. Rub the mixture into the chicken and leave to marinate for at least 4 hours or for 24 hours if you can.
Step 3
Place all the marinated pieces into a roasting dish and pour any extra marinade over the pieces. Pre-heat your oven to the highest temperature.
Step 4
For the first 20 mins cook covered with silver foil so that the chicken pieces would not get burnt but the foil would capture the heat and steam and cook it from the inside out. After that, take out the foil and cook it for another 15-20 mins without the foil so to get the nice roasted taste.
