Instructions

Step 1
Finely chop the red onion and long green chili pepper. Grate the garlic and ginger. Dice the tomato
Step 2
Combine cardamom, coriander, dried red chili peppers and cumin and set aside
Step 3
Bring a pot of water to boil for the noodles
Step 4
Heat up a sauté pan to medium heat. Add the chili oil followed by the spices from step 2. Fry for about 45 seconds
Step 5
Add the red onions and long green chili peppers. Sauté for 3-4min
Step 6
Add the garlic and ginger. Sauté for another minute. Add the salt, sweet paprika, turmeric, and garam masala. Sauté for about a minute
Step 7
Add the tomatoes and sauté for another 3-4min. Use the juices from the tomatoes to deglaze the pan
Step 8
Add the coconut milk and give the pan a good stir. In the meantime, cook the noodles for a minute less than package instructions (in this case, 3 mins). Allow the gravy to simmer on medium low while the noodles boil.
Step 9
Transfer the noodles into the gravy and add a splash of the noodle cooking water
Step 10
Turn the heat back up to medium and cook for about a minute. Be careful not to overcook
Step 11
Plate the noodles and garnish with some fresh cilantro
