Instructions

Step 1
1. Prepare the Hokkien noodles according to packet instructions. Set aside.
Step 2
2. In a small bowl, mix together all sauce ingredients and set aside.

3. Heat a small wok over high heat and add peanut oil. Add chicken mince, breaking it up as it cooks. Once the chicken is starting to brown, add mushrooms, carrot, cabbage and spring onion.

4. Cook for 5 to 8 minutes or until the liquid at the bottom of the pan has evaporated and the chicken and vegetables are cooked through.
Step 5
5. Add the noodles to the wok and pour over dressing. Heat through and season with fresh coriander. Serve.
