Instructions
Step 1
Soak the lentils in water (overnight or at least 4-5h)
Step 2
Peel the onions and carrots and cut them into cubes. Peel the garlic and chop it.
Rinse the aubergines and courgette then cut them.
Step 3
Rinse the lentils and drain them.
Step 4
Pour the olive oil into a cooking pot. Sauté the chopped onions for a few minutes, then add the garlic and sauté it for a couple more minutes.
Step 5
Add the lentils, vegetables and the tomato paste, mix everything. Add the spices except salt and pepper.
Step 6
Add the vegetable stock and let it all simmer on a low to medium fire. When the lentils are cooked add the salt and pepper. Let it simmer for a few more minutes.
Step 7
Before serving hot sprinkled with chopped parsley, taste and season with a little salt and pepper.
