Spinach Muffins

"Veg sweets" are fairly common in Japan for girls. And young mothers often make vegetable based sweets by themselves for their kids who don't eat enough veg. I've been to a specialist cake shop in Tokyo that uses vegetables as its main ingredient. I had nice creamed sponge cake with a topping of a mini tomato, instead of strawberry. It was cute and tasty. These are colourful and healthy treats for O'Bento for kids and adults. The green muffin has a surprising green tea flavour! Spinach and green tea are both types of leaves. Pink muffins made with beets are already popular in Japan.

Instructions

Step 1
Preheat oven to 180°C
Step 2
Boil spinach for 1 minute. Squeeze out the water then use a blender to puree.
Step 3
Add yoghurt, milk, butter, egg to spinach puree. Mix together.
Step 4
Add spelt flour, baking powder, sugar, Fold them together.
Step 5
Put dough into a non-stick or lightly greased muffin tin. You don't need muffin paper cups. Directly into the mould is fine. Push the green peas into the dough. Allow 4-5 green peas for each muffin.
Step 6
Place in oven. Bake for 20-25 minutes.
