For the topping:
Instructions
Step 1
Separate egg whites from the egg yolk.
Step 2
In one bowl whisk egg whites until stiff picks form. Set aside.
Step 3
In another bowl whisk egg yolks with sugar, vanilla and salt until incorporated. Then whisk in the milk.
Step 4
Add sifted flour and baking powder and whisk again until combined and smooth. Do not overmix.
Step 5
Gently fold the egg whites into the egg yolk mixture until are combined.
Step 6
Heat a nonstick pan over low heat and grease with vegetable oil. Grease 2 3-inch round moulds as well and place them onto the pan. Fill 3/4 of the mould with the pancake batter.
Step 7
Cover the pan with the lid and cook for 10 minutes. Then flip over, cover again and cook for another 5 minutes. Remove the moulds and transfer the pancakes to the plate. Repeat with the remaining batter.
Step 8
Serve with maple syrup and blueberries or with your favourite topping.
