SPICY CORN RAMEN

Here I've turned a good old dependable tin of sweetcorn into the star of this ramen dish.

Instructions

Step 1
Toast the sesame seeds in a dry saucepan over a medium heat for a few minutes until they darken in colour slightly, then put to one side.
Step 2
Put a splash of sesame oil into the pan, then add the onion, season and fry for about 5 minutes until softened. Add the garlic and continue to fry for a few more minutes before adding the sweetcorn, butter and chilli flakes. Fry for about 5 minutes, making sure the garlic doesn't burn, then tip everything into a bowl.
Step 3
Now pour the boiling water into the pan, along with the miso paste, stock cube and noodles. Simmer until the noodles are cooked according to the packet instructions, then serve topped with the sweetcorn mixture, spring onions, toasted sesame seeds, a pinch of chilli flakes and a drizzle of sesame oil.
