Bò Kho - Vietnamese Beef Stew

Instructions

Beef & Tendon Prep

Step 1
Rub Tendons with salt, then rinse well
Step 2
Add to a med size pot with boiling water
Step 3
Cook for 1.5-2 hours covered on med-low heat

Remove, let cool, cut, place into a large bowl
Step 5
Rinse Beef Shanks, pat dry, cut, add to the same bowl as the Tendons

Meat Marinade

Step 6
Marinate Beef Shanks and Tendons overnight or for at least an hour with the listed meat marinade above
Step 7
In a large pot on med high heat, add 2 Tbsp Neutral Oil
Step 8
Add whole Yellow Onions, Lemongrass stalks, and Ginger slices

Flip Yellow Onion once it turns a light brown on one side

Stir the rest of the ingredients

Add Star Anise and Cinnamon Sticks

Stir for a minute
Step 13
Remove all ingredients from pot, set aside

Add in minced Garlic, stir until fragrant, add the Beef Shanks, Tendons and Tomato Paste

Stir until the meat is no longer red, add Coconut Water, Water and the Aromatics

Stir, once simmer, cover with lid, reduce heat to med-low, let simmer for 1 hours or until meat is tender

Occasionally skim foam
Step 18
Add stew seasoning listed above, carrots, simmer for another 15-20 minutes
