Braised Beef Stew

Use Brisket or chuck roast
Use Parsnip or 5 carrots
Use Fennel or 6 celery stalks
Use Rutabaga, turnip or 2 potatoes
Crock Pot:
1. In saute pan, repeat steps 2-4 (put meat in bottom of crock pot once browned)
2. Stir in wine, cook about 1 min.
3. Mix in tomato paste, spices worcestershire, 2 tblsp vinegar, flour. Cook about 1 min
4. Add all ingredients to crockpot.
5. Cook on high for 6 hours

2 lbsbrisket
Trimmed cut into 1" cubes

2onions
Large dice

6 clovesgarlic
Peeled and smashed

3 Tblspflour

3 Tblspbalsamic vinegar

2 Tblsptomatoe paste

2 cred wine

3 tblspworcestershire sauce

3 cupbeef broth

¼ cThyme
spices

oregano

onion powder

garlic powder

salt

pepper

3 sprigsrosemary

3bay leafs

5carrots
sliced

1 lbbaby red potatoes

5celery stalks

6 ozmushrooms

Instructions
Step 1
Preheat oven to 325°

Step 2
Pat dry the beef & generously season w. salt/pepper. In Dutch oven or oven safe pot, heat olive oil over medium heat, brown the beef & set aside. (Cook in batches. Do not crowd the pan.) Looking for a good sear






Step 3
Saute the onions and garlic until soft. Coat w flour. Mix





Step 4
Add 3 tblsp vinegar to deglaze the pan. Use wooden spoon to scrape up beef bits. Cook ~1min

Step 5
Separately stir in tomato paste, wine, Worcestershire, seasonings & broth. Cook about 1 min. Add meat & mix








Step 6
Add fresh herbs . Cover with lid. Move to oven. Bake 325° 1hr 30 min.


Step 7
Add vegetables. Cook another 1 hr 30 min
