Over high heat, fry 4 pieces of bacon that have been cut in 1/2 inch squares. Sautéed 1 minced shallot with bacon. Remove from skillet. Sprinkle 1/2 teaspoon old bay on each salmon fillets, add to the pan with skin side up to start. Blacken on 4 sides. (Approximately 2 minutes on each side until the fish is firm but not dry.) Add 1 lb. raw, shelled and deveined shrimp and 1/2 teaspoon old bay. Blacken shrimp. Return cooked bacon and shallots to the pan.
Stir in 2 cups steamed garden peas and 1/2 teaspoon sea salt. Turn up heat. Add the 1 Tablespoon butter and 1/4 cup white wine. Add 1/4 cup heavy cream. Turn off heat
