Instructions
Step 1
Heat some olive oil. Add diced onion. Salt the onion, then cook until slightly softened.
Step 2
Then add the meatballs and garlic, cook meatballs on all sides until golden.
Step 3
Deglaze the pan with red wine. Reduce until there’s half the amount of liquid.
Step 4
Add tinned tomatoes, tomato purée, sugar and bay leaf. Cook down. Taste, add more sugar as needed.
Step 5
Cook the pasta in salted water. Spoon in some of the starch water to the tomato meatballs. When pasta is slightly undercooked, drain and add to the tomato sauce. Mix well, give a minute to finish completely cooking
Step 6
At the last minute, add torn basil. Serve.
