I was really in a hurry, so I put some seasoned chicken on the air frier and just decided to cut potatoes and carrots as side dish. While it was cooking, I just improvised a rhubarb sauce that turned the dish from blah to wow.

Ingredients

4chicken drumsticks
bbq seasoning
12 ozred potatoes
12 ozbaby carrots
¼ tsppink salt
1 tspolive oil
¼ tspblack pepper
For the sauce
Instructions
Step 1
Season chicken with BBQ seasoning, start cooking on air frier for 12 min @ 350
Step 2
Chop the potatoes and season along with the carrots with olive oil, salt and pepper.
Step 3
Once the drumsticks are finished in that side, turn and place the potatoes and carrots with the chicken. Cook for 15 min
Step 4
In a pan, add olive oil, chopped green pepper and finely sliced rhubarb; cook at medium high heat for 1 min
Step 5
On a bowl, pre-dissolve the bullion, vinegar, truvia and salt in the water
Step 6
Add the liquid ingredients to the pan and set to high heat util boiling. Reduce heat to maintain at simmering.
Step 7
Simmer for 2 minuts or until reduced and thicken, then add cilantro and sour cream.
Step 8
Taste for season, add pepper and salt to taste. Cook for an additional min.
