Mushroom Curry

This vegan curry provides a burst of Sri Lankan flavour! It was submitted by Guyani, who grows lots of the ingredients herself!

Instructions

Step 1
Clean mushrooms and slice. Mix all the spices above apart from mustard seeds with mushroom
Step 2
Heat about 2 tbs coconut oil in a pan. When it is hot, add mustard seeds and wait until mustard pops. Add onions, cook til onions are soft.
Step 3
Add garlic and ginger, chillis, curry leaves one by one
Step 4
Cook stirring for one minute. Add tomato into this and saute.
Step 5
Add mushrooms. Mix well and cook for 2-3 minutes. If mix is too dry, add a few drops of water
Step 6
When mushroom pieces are well coated with spices and cooked, add thick coconut milk. Add salt to taste.
Step 7
Cook for another 2-4 minutes stirring the curry.
Step 8
Serve with plain warm rice.
