Instructions

Step 1
Grab a saucepan and fry the onion and garlic in a splash of olive oil over a medium heat for about 5 minutes until soft and cooked. Add the lentils and curry powder and stir, coating the lentils in the oil. Next add the coconut milk and the water and simmer for about 15 minutes until the lentils are cooked (adding more water if needed). About 5 minutes before the end of the cooking time, add the chickpeas and season to taste. Just before serving add the spinach, stirring it through so it wilts.
