Instructions
Step 1
Sauté bell peppers and onion for 3-5 minutes until bell peppers are softened
Step 2
Add garlic and cook for 30 more seconds
Step 3
Add diced tomatoes and cook down for a few more minutes until tomatoes are softened. About 2 minutes
Step 4
Add beans, rice and taco seasoning. Mix well.
Step 5
Add chicken stock and mix. Cover and reduce heat to maintain a low simmer for 10-15 minutes, stirring occasionally to scrape rice off of bottom of pan. The dish is done when the rice is tender.
Step 6
To serve, add cheese (cheddar, manchego, Oaxaca), optional additional protein (chicken or beef), and limes. Serve with sour cream and toastadas or tortillas
