Instructions

Step 1
Saute red onion, garlic and zucchini. Add remaining ingredients apart from spinach and penne.
Step 2
Add more broth if required.
Step 3
Simmer for 1 hour, adding more broth as required. In the last 15 minutes, add spinach and penne.
