Instructions
Step 1
Add to food processor, onion, garlic, chilli, lemongrass, ginger and most of the coriander and blitz into a paste.
Step 2
Add olive oil, vinger, lemon juice, fish sauce and spices and mix until smooth.
Step 3
Pour into a pan and start to cook on a low heat
Step 4
Boil water for noodles
Step 5
Add chopped chicken to the marinade and turn up heat. Add vegetables and stir. Once almost cooked add coconut milk.
Step 6
Cook noodles in water
Step 7
Turn down heat on chicken for a few more minutes
Step 8
Serve chicken over noodles and add remaining coriander and sliced spring onions
