Ingredients

2 portionsmixed grains
1red pepper

1green pepper

1yellow pepper

sesame seeds
250gfirm tofu
drained, or cauliflower
1 ½ Tbspwholemeal flour
½ tsponion powder
½ tspblack pepper
½ tspsalt
1 Tbsphoney
or sweetener of choice
2 Tbspextra virgin olive oil
2 tspfresh ginger
1garlic clove
crushed
2 ½ Tbsptamari
½ cupwater
1juice of lemon
1 Tbspwholemeal flour
1 Tbspwater
2 Tbspmirin

Instructions
Step 1
Preheat the oven to 200°C / 400°F. Meanwhile, cut the tofu into bite-size pieces, and combine with the wholemeal flour, onion powder, pepper and salt. Make sure the tofu is completely coated.
Step 2
Line a baking tray with foil and grease with a little olive oil. Transfer the tofu carefully, ensuring the pieces are spaced out and cook for 25-30 minutes.
Step 3
While the tofu is in the oven, cook your grains according to the packet instructions and stir fry your veggies in a frying pan with a drizzle of extra virgin olive oil for 2-3 minutes, or until cooked through.
Step 4
Once your veg is cooked, you can make the sauce. Add all the ingredients, other than the flour to a pan over medium heat and bring to a simmer. Mix the flour and water together, then add to the saucepan. Let the sauce thicken and then add your cooked tofu and stir gently to cover.
Step 5
Pour the sticky tofu over your rice and veggies and enjoy!
