Super easy meal for week night. Serve with rice or tacos. Serve with vegan sour cream and guacamole. Two large or 3 medium servings.

Instructions

Step 1
Sauté onion until soft.
Frying PanFrying Pan
Step 2
Add diced celery, capsicum, garlic and chili and sauté for a further few minutes.
Step 3
Add spices and sauté for another minute, stirring all the time.
Step 4
Add canned tomato and drained beans. Bring to the boil.
Step 5
Simmer over low - medium heat for ~ 15 minutes till sauce is thickened.
Step 6
Spoon into serving dish and garnish with coriander.
Step 7
Add salt and pepper to taste.
