Step 1
1. Dice leeks and fry in a large pan with olive oil & garlic until soft 2. Peel and cube potatoes and add them to the pan and cook for 3 minutes 3. Add water, stock & seasonings and bring to a boil
4. Let simmer for 30-40 minutes until potatoes are soft and blend then readjust seasonings to taste
