Step 1 - Crema

0.5avocado
1 Tbspyogurt unsweet

¼ cupcilantro leaves

salt
to taste

black pepper
to taste

1 Tbsplime juice

water
as needed
Step 2 - Collard Green Slaw

4 ozcollard greens
chopped

0.5Jicama
julienned

0.5red onion
sliced

4radishes
julienned

¼ cupcilantro
chopped fine

lime juice

lime zest

salt
to taste
Step 3 - Salmon
Step 4 - Cooking
Step 5 - Tacos!
Instructions
Step 1
Puree ingredients in Step 1 in a food processer
Step 2
Mix ingredients in Step 2 in a medium bowl
Step 3
Evenly coat salmon with spices in Step 3
Step 4
Heat oil in a non-stick skillet. Cook salmon about 3 minutes on each side, let spices blacken. Target 120-125 internal temperature.
Step 5
Grill tortillas until warmed with some char. Insert chunks of salmon, slaw mix, and creama in each taco. Serve with a lime wedge.
