Instructions

Step 1
With a low flame, temper bay leaves, cinnamon, black and green cardamoms in ghee and oil
Step 2
Add garlic and ginger and cook for 10 minutes until they are golden brown.
Step 3
Add onions and melt with 2 tsp salt. Don't brown onions, melt them down. Use water intermittently. Cover with lid. This will take 20-30 min
Step 4
Add chicken and madras curry powder. Mix and cook with a fairly medium flame for 15 minutes until chicken is white. Cover with lid.
Step 5
Make almond paste by soaking almonds in hot water. Aftera minute, take the jackets off and crush. Add almond paste, green chillies and evaporated milk. Cook for 10 minutes.
