Instructions

Step 1
Preheat oven to 400°.
Step 2
1. In a large bowl combine dry ingredients: flour, sugar, baking powder, and salt.

2. In a separate bowl mix together the half and half with the lemon juice. Add the greek yogurt, eggs and lemon zest to the mixture.
Step 4
3. Stir the wet ingredients into the flour mixture, stirring just until moistened. Fold in the raspberries.
Step 5
4. Line a muffin tin with liners, or grease it well with cooking spray. Fill 16 muffin cups 2/3 full. Top each muffin with 1/2 teaspoon drop of lemon curd.
Step 6
5. Bake for 18-20 minutes or until a toothpick inserted in the center comes out with few crumbs.

Recipe Notes: One muffin is 4 WW Smart Points on all three plans: Green, Blue and Purple. (For Blue and Purple each additional muffins is 3 points each).
