Oyakodon (親子丼), literally “parent-and-child donburi”, is a donburi, or Japanese rice bowl dish, in which chicken, egg, sliced scallion or regular onions, and other ingredients are all simmered together in a soy sauce and dashi stock, and then served on top of a large bowl of rice.

Instructions
Step 1
Combine all the ingredients for the sauce and bring them to a simmer over medium heat.
Step 2
Add bite-size pieces of chicken and let it simmer again. Skim the foam. Add onions. Cover with parchment and simmer over low heat until chicken is tender, for about 15 minutes.
Step 3
Meanwhile, lightly beat eggs in a bowl. When the chicken is done, drizzle half of the eggs over the chicken and let it cook. Add the rest of the egg and turn the heat off.
Step 4
Portion the rice in the individual bowls and ladle the chicken and egg on top of the rice. Serve garnished with mitsuba and Sancho pepper.
