Borlotti Bean Stuffed Pitta Breads

These are quick to make and delicious on-the-go or as part of a picnic. They don't need cooking, so can be ready in minutes. Delicious served with a spoon of low-fat mayonnaise or reduced-fat creme fraiche and a side salad.

Ingredients
4 servings
1can of borlotti beans in water
drained and rinsed

2tomatoes
large, finely diced

1gherkin
large, finely diced

1spring onion
large, very finely chopped

fresh coriander
chopped

4pitta breads
or flatbreads
Instructions
Step 1
Mix together the beans, tomatoes, gherkin, spring onion and coriander. Season to taste.
Step 2
Cut the pitta breads in half and then slit each half open to create pockets.
Step 3
Fill the pockets with the bean mixture and serve.
