Instructions

Step 1
Cook the quinoa or rice (if using) according to the packet instructions.
Step 2
Set aside.
Step 3
Place the dressing ingredients in a small bowl and stir to combine.
Step 4
Add water until you've reached your desired consistency.
Step 5
Place the lettuce cups on a serving plate and top with the lentils, grated carrot, diced tomato, broccoli florets, red onion and quinoa or rice (if using).
Step 6
Add a dollop of mashed avocado, a sprinkle of seeds and a drizzle of the dressing.
Step 7
Serve between plates and garnish with fresh parsley and mixed seeds.
