1sweet potato

1 Tbspolive oil

400glentils
drained and rinsed

10cherry tomatoes
halved

2 handfulbaby spinach leaves
shredded

0.25 bunchparsley
picked and shredded

Dressing
Instructions
Step 1
Preheat oven to 180 degrees

Step 2
Line a baking tray with baking paper. Lay out the sweet potato, drizzle with 1 tbsp oil and salt and pepper. Roast for 25 minutes.
Step 3
Place all ingredients for the dressing in a small bowl and whisk to combine.
Step 4
Combine lentils, tomatoes, spinach and parsley in a bowl. Pour over half the dressing and toss to coat.
Step 5
Lightly grease non-stick frying pan with olive oil and heat. Fry the halloumi.
Step 6
Divide lentil salad and roasted sweet potato between two bowls. Top with halloumi and avocado slices. Finish with a drizzle of the remaining salad dressing.
