Enjoy it with kimchi and a bowl of hot rice. So yummmm! Korean Soybean paste is kinda like Japanese miso but has its own unique flavor ( more savory and more intense). It’s a healthy fermented food that’s rich in vitamins, minerals and gut-healthy probiotics. ☺️

Ingredients

Oil 1 Tbsp

Cut into bite size, Any cut of beef will do, I prefer beef brisket
Onion 1 medium, chopped

Water 4 cups
4 cupswater
Potato 1.5 cup, cubed
1 ½ cupPotato

1 dashi soup stock bags or 1 palm-size dried kelp + 10 dried anchovies
1 bagsdashi powder
½ cupKorean soybean paste
Korean hot pepper paste 1 Tbsp
1 TbspKorean hot pepper paste
12 ozTofu
cubed
Zucchini 1.5 cup, cubed
1 ½ cupZucchini
cubed
Green onions 2, sliced
2Green onions
sliced

Instructions

Step 1
Heat oil on medium high in heavy-bottom soup pot.
Step 2
Add beef. Cook 5 - 7 minutes till all sides are seared.
Step 3
Add onions. Cook for 5 minutes till lightly golden.
Step 4
Add garlic. Cook 1-2 minutes or till fragrant.
Step 5
Add water and dashi soup stock bag.
Step 6
Add potatoes. Bring to a boil.
Step 7
Cover and cook on medium for 25 minutes.
Step 8
Remove stock bag.
Step 9
Add tofu, Korean soybean paste, Korean hot pepper paste. Gently mix.
Step 10
Add zucchini. Cook for 5 minutes.
Step 11
Top with green onions.
