Cabbage Pancakes

Cabbage pancakes! We’re getting beautiful cabbage in our farm shares. If you looking for an option to coleslaw then try a Japanese savoury pancake called Okonomiyaki. There is some prep time required but these are so worth it! (Thanks Chris Grosset!!)

Instructions

Step 1
Place all of the pancake ingredients in a large bowl, and then stir in the beaten egg to make a paste like batter. Heat a fry pan with oil (I use sesame oil and sunflower oil). Spoon batter into the pan and press into 1/2 inch thick cakes, and fry 3 minutes and then flip over to cook another 3 minutes.
Step 2
You can in advance make the sauces and dressing elements.
Step 3
Okonomiyaki bbq sauce - mix 1 tablespoon each of soy sauce, Worcestershire sauce, ketchup and honey. Microwave it for 30 seconds and then stir and leave to cool
Step 4
Japanese style mayonnaise - mix 2 tablespoons mayonnaise, 1 teaspoon rice vinegar and 1/2 teaspoon of sriracha sauce
Step 5
Plate the pancakes with a drizzle of the bbq sauce, mayo, sprinkled with onions, sesame seeds and nori, and served with the ginger and wasabi.
