Broth
2 lbsPork Neck Bones
8 quartwater
5Shallots
small, Minced
3carrots
large, peeled and cut into 1 inch size
1yellow onion
large, whole
fish sauce
chicken bouillon powder

Pork & Shrimp Meatballs
Instructions
Step 1
Rinse 2-3 lbs Pork Neck Bones, if using Pork Rib Tips, cut to desired size and clean well
Step 2
Bring a pot of water about 8 quart to a boil
Step 3
Add Pork to pot parboil, remove pork once it simmer for about 5 minutes
Step 4
Discard water, rinse pork under running water to remove any impurities
Step 5
Start a new pot with 8-10 quart water
Step 6
Add clean Pork back to the pot
Step 7
Once it starts simmering, skim as much foam as you can during the simmering process to keep the broth clear

Add one peeled whole large yellow onion to the broth

Peel 3 large carrots, wash and cut into desire size but not too thin, set aside for later

Continue letting broth simmer on medium low heat with lid on for about an hour
Making the Pork & Shrimp Meatballs
Step 11
In a large bowl, add ground pork

Add clean, deveined and minced shrimp to the same bowl

Chicken Bouillon powder

Black Pepper

Oyster Sauce

Mix meat mixture well, forms into balls then add to soup pot

You can taste test the first meatball by adding it to the soup pot, once it floats up , remove then taste. Adjust meat mixture seasoning as needed

Continue adding meat mixture by spoonful as meatballs shape to the soup pot
Finishing the broth

Remove yellow onion, discard

Add cut carrots to the soup pot, let simmer for additional 15 minute or until carrots are cooked

Season broth with Chicken Bouillon Powder, Sugar, and Fish Sauce

Broth should cook a total of 1 1/2 hour

In a separate sauce pan, add 2 Tbsp cooking oil and minced shallots

Turn off heat, remove pot from stove once the shallots starts to reach a golden light brown color then add fried shallots to broth

Prepare prefer pasta according to the package

Add pasta to a bowl, add soup broth and meatballs, top with chopped Scallions & Cilantro

Drizzle some Sesame Oil, add black pepper and chili oil if you prefer spicy
