Instructions
Step 1
Fry fatback until crisp.
Step 2
Remove pieces, and drain on paper towels.
Step 3
Sauté onion in fatback drippings.
Step 4
Add tomatoes, soup, water, sugar, ketchup, Worcestershire, Tabasco, salts and pepper.
Step 5
Cover and cook for 30 to 45 minutes over low heat.
Step 6
Add fish during the last 12 to 15 minutes of cooking time, depending on size of fish.
Step 7
Serve in soup bowls over hot rice, and garnish with crisp fatback.
Step 8
Serves 6
Step 9
May be frozen for several months without fish.
