Instructions

Step 1
Place a wire cooling rack on a rimmed baking sheet and place in the oven
Step 2
Preheat oven to 450°
Step 3
Place pork chops on a large cutting board. Cover with plastic wrap and pound until 0.25-in thickness
Step 4
Sprinkle with pepper and salt. Place flour, egg and pretzels and three shallow dishes. Dredge in flower, then egg, then press into pretzels
Step 5
Generously coat one side of the cutlet with cooking spray
Step 6
Remove the heated pan from the oven. Put the cutlets, sprayed side down on the rack. Spray the second side generously with cooking spray and bake until golden brown, 8 to 12 minutes
Step 7
Combine yogurt and mustard in a small bowl and serve with the pork
