Instructions

Step 1
Heat olive oil olive in a pot. Add chopped onion and cook gently for 5 minutes.
Step 2
Add finely chopped celery, yellow pepper, red pepper and cook for a further 5 mins.
Step 3
Add the chorizo and sausages, fry for 5 minutes.
Step 4
Stir in garlic, smoked paprika, cumin and thyme then continue cooking for 1 – 2 min.
Step 5
Add tinned tomatoes and bring to a simmer. Crumble in the chicken stock cube and stir.
Step 6
Cook for 40 minutes. Stir in drained and rinsed cannellini beans and cook for a further five minutes.
Step 7
Taste test, season with black pepper and add any additional seasoning if you need it. Serve with salad or vegetables.
